Okay folks, Along the same sort of idea of the $5.00 challenge. I am looking to start up conversation on simple to make, easy in camp meals that are budget friendly. Some of my favorites...

#1. Tony Cacheries gumbo with sliced smoked sausage. Not available everywhere, but here in TX we have a boxed Gumbo mix by Tony Cacheries that is REALLY quite good. We take Holmes Smokehouse pecan smoked sausage, and cut up 1 link into the batch, and add about 1 cup of sliced okra. 2 boxes gumbo mix $1.13 each, and sausage on sale $2.50 each. My neighbor grows a mess of okra so we get that free. That falls in under the $5.00 and will feed a family, drinks extra.

#2. Beanie Weenies. Do I need to explain this? Served with biscuits. Cut the hot dogs up into the pan, open the can of beans into the pan, heat it up...

#3. Baked chicken breast at home, and cubed. In camp toss it into a family box of Chicken Flavor Rice a Roni and throw in a couple of cups of broccoli florets.

#4. Pre cooked and sliced fajita chicken or beef quesadillas. Flour tortillas, butter, muenster cheese, sliced bell pepper and sliced onion assembled in proper proportions and grilled in butter in a cast iron skillet until the cheese is melted and holding everything together. Mushrooms etc.. are optional. Serve with sour cream and pre made pico de gallo...

So theres my ideas off the top of my head. What do you have?

Mason jar of elbow Mac, dehydrated carrots and onions and a bullion cube. Add canned chicken meat. Boil until happy.  Cheap but good and less then a 5$.

Pretty cheap.
For those beanie weenie’s Bush’s makes something called Steakhouse Receipe beans that’re pretty darn good.

A simple cottage meal I've been doing lately is slice up a can of Spam and heat up the slices while you cook up a pot of Mac & Cheese.  We like the "deluxe" mac & cheese which bumps up the price of the meal, but whatever version you like.  Add a canned vegetable, either heated separately or throw it in with the mac & cheese.  Done.

Not a huge fan of spam, but definately going to hide this post from my wife. She LOVES spam... 

A quick and easy veggie to mix in to the box / boil up meal things is just plain old Peas and carrots. Does the trick.

FWIW, SOS is another place we add peas and carrots... 

I forgot about the Corned Beef Hash. 

Fry an egg and serve it on a bed of heated corned beef hash for breakfast. That'll get you through the day for sure.

So I hate to be "that guy" but as we should all be aware by now, pre processed, canned, boxed foods are typically insanely high in salt and other preservatives that aren't so great for people... Any pointers on lower sodium / preservative options that are still convenient / easy to make in camp?

My wife doesn't quite get the hash being a generic term, not specific to Corned Beef Hash, and she tend to take leftover roast beef from home, chop it up and mix it with butter fried diced potatoes and onions. We also do something similiar with leftover barbacoa de cabeza.

This thread is making me hungry.  For a little twist on fast easy and cheap, I keep some things in the freezer that cook up fast and easy both at home and on the two burner camp stove.
Frozen potstickers and vegetable yakisoba.  For camping I put about 2 Tbls's of oil in the CI skillet along with the frozen potstickers, add the recommended amount of water from the package directions cover the skillet and start the heat.  The water gets the potstickers cooked and when it evaporates the oil puts a nice browning on the potstickers, you can always remove the cover after the water has done it's job to speed up the browning towards the end.  Meanwhile the frozen yakisoba goes into a covered pot on a veggie steamer with just enough water to steam the veggies and noodles.  I like using my own sauces for them, but the ones in the packages aren't bad.  Throw everything into a bowl. Not much prep or cleanup.

Something we use while camping are the cooked at home elbow macaroni. Fry up some bacon, add some chopped onions, toss in the noodles until hot, then throw in a couple of eggs on top and stir. Don't get many complaints.  Another one is home boiled potatoes. At camp, cut them up and fry them, add meat, cheese and / or eggs and you got a quick good meal. Cheers.

Cook a box of Kraft Diner and mix it with a pound of fried up ground beef. Simple yet delicious hamburger helper. Good as is or you can get creative with spices if you have them on hand.

😋London broil is an inexpensive but tough cut of beef.  Cube into 1-1/2" squares and marinate in wine. Skewer with red onion, bell pepper, 'rooms.  Cook over flames---Beef Kebab! Mince yellow onion and flat parsley as a garnish with rice pilaf on the side to go first class

2 cups Buttermilk Biscuit mix (Winco Bulk)
1/2 lb favorite cheese
 Mix biscuit mix thick and pat out. Cut in 3# x4" pieces. Put hotdog on stick or fork lay on biscuit mix with slice of cheese and wrap hotdog. Lean against fire ring or hold over fire and cook till golden brown. I serve mine with pork n beans or Bush's grilling beans. Yum

Pie iron ideas:
#1. Pie Iron quesadillas.

Ingredients:

Pre cooked, and sliced beef, and / or chicken fajitas.
sliced yellow onion.
shredded muenster cheese
diced mushrooms (portabella)
Diced peppers.
Small flour tortillas.
Butter.

Cooking.

Pre heat pie iron, and grease inside with butter.

Butter outside of 2 flour tortillas (Small taco size).
Lay 1 tortilla into pie iron, press into cavity carefully
Fill with chicken cheese, onion, mushrooms, and peppers
Put second tortilla on top and close iron.
Trim off excess tortilla.

Bake over coals for for 10 - 15 minutes or until cheese is melted. *

* Adjust time depending on how hot the coals are, we are aiming for the pie iron to be approx 300 deg F.


#2. Hot ham and cheese pockets.

Ingredients.

Sliced bread. We use "whitewheat" bread, healthier than regular white, not as gravelly tasting as regular wheat...
Thick sliced black forest ham. We use the stuff from Sams Club.
Shredded cheese of your choice. We use Tillamook shredded sharp cheddar.
Butter.

Pre heat pie iron, and grease inside with butter.

Lay 1 slice or bread into pie iron, press into cavity carefully
Fill with ham and cheese, folding the ham so tha tit doesn't overlap the outside of the iron.
Put second slice or bread on top and close iron.

Bake over coals for for 10 - 15 minutes or until cheese is melted, ham is hot, and bread is toasted. *

Easy box dinners. Not sure if I mentioned this...

#1. Gumbo.

Ingredients.
Tony Cacheries gumbo mix.
1 lb link of pecan smoked sausage sliced into 1/4" slices
Sliced okra in season. Pre slice sausage and okra at home.

Follow box instructions for prep and add sausage and okra to boiling mix.

#2. Rice a Roni asian chicken and rice.

Ingredients. 

Rice a Roni Chicken flavor. (Family size pack).
Baked chicken breast pre cooked and sliced.
Butter to prep the Rice A Roni per package instructions.
1 cup peas and carrots.
1/4 cup sliced almonds. 

Prepare per package instruction. Add chicken, veggies, and almonds once the mix is boiling.

Baked Ziti with garlic bread.

3 cups pre par boiled and rinsed Ziti noodles, most folks use Penne which is fine.

I jar marinara sauce. 
1 lb pre browned / crumbled and drained italian sausage
1 tbsp Italian Seasoning.
1 cup shredded mozzerella.

1/2 loaf french bread.
Butter softened
Garlic powder


Prep. Mix all ziti ingredients except for cheese in a 9" square cake pan. Top with shredded mozzerella.

Slice french bread down the middle length wise like a giant submarine sandwich.
Butter the loaf pieces thoroughly on the inside part.
sprinkle garlic powder over buttered bread to taste
wrap with foil. such that there is one side that has the seam that will point up.

Cook.
Pre heat Coleman folding camp oven to 350 deg F.

Place Ziti pan in oven, and close door.
Place foil wrapped french bread on TOP of oven.
Bake for 30 minutes, or until cheese is melted, ingredients thoroughly heated and bread toasted fully. Turning bread periodically to toast evenly.

All the ingredients pack in and don't need refrigeration. We use some butter packets from KFC and condiments from fast food when we can.

1. Chicken with Alfredo noodles. One package Knorr Alfredo noodles cooked to instructions on the package except skip the milk, add one small can of canned chicken (Drained). Season with S&P and eat up. Feeds one teenager per package.

2. Modified Ramen bomb. Cook ramen noodles with 1 1/2 cups water, add one small can of canned chicken, add 1/4 to 1/2 cup instant rice to absorb liquids if needed. Season with S&P and eat up. Feeds on teenager per package.

Lots of ways to get some good eats in camp if you get creative.

I've done something similar to your chicken with Alfredo noodles. I don't used the canned chicken though. Not sure how expensive it is, but if you are looking  at a cost per person served perspective. Ours is...

1 boneless skinless chicken breast, pre baked, blackened, and cut into chunks.
1 package Knorr noodles / alfredo sauce prepared per directions. I use powdered milk instead of fresh for recipes like this. It's mostly temp stable and thus doesn't suck up prescious cooler space.... and its cheap.
Frozen broccoli florets. Kept in cooler until ready so they are usually thawed by the time I get to them. 8oz bag.

Cook alfredo noodles in slightly oversize bag, with about 1/4 cup extra milk.
Throw in chicken chunks, and bag of broccoli, allow to heat thorougly and enjoy. Feeds 1 teenager, or 2 not stupid hungry adults.

Cost. 
Knorr Alfredo Noodles. $1.00
Chicken Breast if shopping on sale and separting / deep freezing them. $1.00
Powdered milk. Guessing at $.50
Frozen Broccoli 16oz bag, $1.48 and you will use 1 bag for 1 recipe. So $.79 per...

Total. $3.29. Double up if you are feeding more or are hungrier than one recipe will feed.

Grilled Cheese with Tomato Soup.

HEB Select ingredients Tomato Soup. $.88 prepare to can directions. (dump, add 1 can water, heat) $.88
HEB Texas Toast. $1.48 loaf, you will use 1/4 loaf for 2 sanwiches.                                                      $.37
Hill Country Faire American Cheese singles, 16 slices.  $1.45You will use 2 per sandwich.                  $.36
Kerrygold 8 oz Irish salted butter. You will use less than 1oz for both sandwiches. $2.88                      $.36

Total $1.97 for a nice hot meal of soup and sandwich. 

Optional, that i more or less always do.
Oscar Meyer Smoked Ham 16 slices,  $4.98 1 slice per sandwich.                                                        $.63 additional.

French Bread pizza.

HEB Fresh made French bread (We typically buy a loaf just as we are heading out on our trip). Sliced along the middle so you have a top half, and bottom half. You will need to cut these crosswise down the middle 2 so you end up with 2 top quarters and 2 bottom quarters I guess you could call them. $1.50

HEB Select Ingredients Pizza Sauce. $1.37. You WILL have lots of extra.
Hill Country Faire shredded Mozzerella. 16oz. $2.49

Total $5.36, but this recpie feeds 4.

The rest I am going to count as freebies because, we are going to use leftovers.

Top with whatever applicable leftovers you have available. We typically have some leftover fajita chicken, and beef, grilled onion, sliced tomatoes, mushrooms etc...


Preheat Coleman Oven to 350 deg F. Canadians and others using C please co the conversion yourself... I'm lousy at it.

Spread pizza sauce on bread pieces on the inside.
Sprinkle mozzerealla liberally accross the loaf pieces. NOTE, this can be done as a cheese on top, or cheese between. I like cheese between, my Dad did cheese on top.
Place your toppings on top of that.
Put 2 pieces of pizza on the rack (centered) and bake for 10 - 15 minutes, or until bread is toasty and cheese is melted. You may need to rotate the pizzas in the oven to keep from burning one spot and undercooking another, the fault of the Coleman oven.

Repeat with remaining 2 pieces.

Serves 4 adults, or 2 teenagers.

Okay beverages. This is one of my favorite hot weather ones...

Mexican Jamaica. This may be tougher for northern folks... A.K.A. Iced Hibiscus Tea.

1 cup dried Flor De Jamaica (Dried Hibiscus flower tea). about 1/4 of a $.88 bag. $.22
Sugar. 4lbs. I am guessing each pound is 1 cup volume,
so 1 lb of 4 gets used I guess... $1.88 / 4                          $.47
Half gallon clean water.
Gallon of bagged ice. Probably use 1/2 of it.
Freee because you are going to bring this from the
freezer at home... 

Total  $.69 for a gallon (assuming free water, from home ice etc...

Bring half gallon of water to a rolling boil.  Remove from heat.
Add 1 cup of sugar (or sweeten to taste). Best done when hot so sugar dissolves better.
1dd 1 cup Hibiscus tea. Allow to steep until it reaches a dark deep red color.
Fill hot / cold shatterproof container, like a 1 gallon hot / cold stainless drink jug, with ice.
Using strainer, pour hibiscus tea over ice. The ice will melt and the resulting beverage in the jug should be a medium darkness red.

Enjoy with, well pretty much anything.

I make a cast iron pan dinner from marked down pork chops, canned mushrooms, 1 sliced white onion, and a couple pkgs of off brand mushroom or brown gravy mix. Usually under 5 bucks.
Just brown the chops, mix up the gravy, add to the pan, same with the canned mushrooms and the onion. Bring to a simmer, cover and cook till the chops fall apart.

HEB Split top white bread. $1.58 / loaf. Yields 12 sandwiches per loaf. (cost for 2 sandwiches)           $.28
Kerrygold 8 oz Irish salted butter. You will use less than 1oz for both sandwiches. $2.88                      $.36
Oscar Meyer Smoked Ham 16 slices,  $4.98 1 slice per sandwich.                                                       $1.06
Hill Country Faire 8oz shredded medium cheddar. $1.68. 1/8 package per sandwich.                           $.20
HEB Steamable Broccoli Florets. $1.28 12oz. Use 3oz per 2 sandwiches.                                             $.32
Total for 2 sandwiches.                                                                                                                            $2.22

Pre heat pie irons over camp fire coals or charcoal. 
Dice ham, and broccoli into small bits. Mix thoroughly with shredded cheddar.
Butter insides of pie iron both top and bottom.
Press bottom side bread into iron cavity,
Fill cavity with 1/2 of the filling mix.
Place top bread on top of bottom bread / filling mix and close pie iron.
Heat over coals for 5 - 10 minutes or until bread is completely toasted and filling is hot.

Remove from cooker(s) and repeat for second, or if you have 2 irons, plate and serve.

A bag of frozen mixed vegetables on sale, a large can or carton of beef broth and cook in a pot until veggies are done.  In another pot boil some pasta in water, again whatever is on sale, and drain when cooked. Put the pasta in a bowl and ladle the soup on top (keep leftovers separate or it'll turn into mush as the pasta absorbs all the broth)  Add some crusty bread.

You can substitute chicken broth for beef, add leftover chicken and have chicken noodle soup.  That would go better with wide egg noodles but it'll be good either way.

I've got to hide this post from my wife, I HATE bologna, and spam, my wife loves both of them. She doesn't need any ideas on that regard!

*EDIT* Rethought this, nah, I think I can make this work. She loves Bologna and SPAM, which I hate, I love Bratwurst that she hates. She can do the fried Bologna and I can grill a few brats and we can both be happy...

Grill Linguica until 25-50% of the skin is charred, put in a torpedo roll.  Serve with canned pork and beans, or make Portuguese beans from a recipe (far more delicious but time consuming)

A couple of healthy alternatives:

1 can of low sodium green beans, 1 can of diced tomatoes, 1# cooked ground beef. Season to taste.

One head of Romain  lettuce sliced length-wise in two. Each half gets half a can of garabanzos and half a can of kidney beans and half  a can of tuna and diced red onion. Season to taste and dress with oil and vinegar with a dash of Worchestershire, or your dressing of choice.  Serves two. Italian Navy Salad.

When going on an extended backpacking trip, we always packed a couple of emergency dinners, that were easy to fix.  One of our favorites was a package of instant Idahoan loaded mashed potatoes, and some Jack-Links rib-eye jerky.  Simply boil some water and add to the potato packet in an insulated cup, then dip the jerky in like French fries in catsup.  We always rated our menus at the end of the trip for reference for the next year's excursion, and this one was always repeated.
